Loose Itinerary Check
I will be taking my first international trip to visit China with my girlfriend and see the sites as well as visit her family. Our trip dates will be 5/14 - 5/29 so 16 days total including travel. The things we have set in stone right now are starting with a 4 day guided trip in Beijing. We need to spend time in her hometown of Ningbo, then visit family in Hangzhou as well, maybe 6 days total. We plan to fly back home out of Shanghai and visit her friend there to finish our trip. We really wanted to add one more city to our list - Chengdu or Chongqing, but in reality I think we are likely tapped out already; just want to get confirmation it would be taking on too much for our timeframe. I agree with your sentiment that you are already packed. As your first international trip, you will probably want some lower activity days to adjust to jet lag at the beginning too.
But if you do want to add, since your girlfriend is from China, you will probably be back in the future. And so I would orient on where it will be good to visit in May specifically. Top options in my book would be Guilin because that time of year will have the misty and green landscape for the river cruising or Zhangjiajie for the Avatar Mountains. Chengdu I would combine with Jiuzhaigou, which seems like you would want more time.

Honestly there’s so much to unfold in each city that adding another one would possibly burn you guys out unless you plan on speed running everything.
I suggest sticking with a light itinerary and enjoying the most out of the places you’re going too - many are really good thus far
