Does this mean it’s undercooked?
galleryI took off a wing to try and noticed this.. threw the wing away stupidly. I flipped the chicken and checked the breast was fully cooked but idk.. is this normal?

I am looking for a recommendation for a good cookbook with chicken recipes. The kind where you cook chicken by marinating, frying and then letting it simmer in a tick deliciously sauce, and serve with rice.

Last week we ordered a chicken tender sandwich from a local restaurant, the tenders had these thick hard parts in it and stretchy pieces. When we told them about it they gave us a whole new meal tonight to try and rectify it, but the outside of the tenders have this like rubbery stretchy casing on the outside of the chicken under the breading? What is this even???

I noticed one of my hens wasn’t using her right leg. Upon inspection I noticed a blister. I pulled her from the coop and she’s been living in a kennel in our shop for the last 10 days. I have been soaking her feet in epsom salt, applying SSD cream, and wrapping daily. I’m not seeing much improvement. At first I suspected frost bite and then bumblefoot but I really have no idea at this point. She had also been molting and now that most of her feathers are back I’d like to put her back in the coop. It’s very cold here, single-digit temperatures, but upper 30s for the next two days. Can anyone offer any advice on treatment or if you have experience? I’ve had my small flock for four years and this is the first time I’ve encountered this.

Prep the night before to roast the next day.
Line a sheet pan with heavy foil and a baking rack.
Finely chop 1T rosemary Mix in 1T kosher salt Zest of one lemon
Spatchcock a whole chicken (cut out the back or as a butcher to do it for you – freeze the back to throw in a broth).
Rinse and pat dry. Place chicken on rack open side down. Carefully separate the skin from the meat on the breasts and legs, keeping the skin attached.
Shove about 1/2 the herb mixture under the skin and sprinkle the rest on top of the skin. Put the bird UNCOVERED in the fridge overnight. You want the skin to dry out.
Roasting Day: preheat oven to 425’ and take the bird out of the fridge. Before putting the bird in the oven, brush it with melted butter and sprinkle with S&P. Add some water to the pan to prevent smoking. You may need to add more after 20 minutes. Roast til thickest part of the breast is 160’.
Remove from the oven and immediately eat all the delicious crispy skin. Do what you will with the meat.
