1. How can i increase my character's stats more? I see people with +480 or more than +300 but i can only get to +300 max.

2. Is STR Ace (Embodiment of Whitebeard Era) any good? I wanna use him with V2 Snakeman as my Captain. Also, If he's good, should i use cotton candy on him to boost his stats?

1. play pirate rumble, get the red tickets by winning and upgrade the cotton candy stone things on the facility island (on the far right side)
2. he is a decent sub, but not good as a captain. you would rather use another STR boosting legend as a hybrid with v2 snakeman. Typical rule: f2p units are a good sub, but rarely a good captain. i would spend cc only on units like legends are really really good RRs and f2p units at the start, i wouldnt count that ace towards these.

No i meant V2 Snakeman to be my Captain and run Ace with him as a crew

Oh i see. Hm he is ok as a snakeman sub, he would remove your block orbs if the enemy gives you some, which snakeman cant. But they both are orb boosters, so there are units which can fit better in your team.
