Should I be farming the kaido/big mom brawl to get manuals to upgrade my Kaido vs Big Mom that I just pulled?

Absolutely, max their special level

Always farm the attached manual event for debut legends. Even if you don't plan on pulling for that specific unit, you never know how lucky you'll get later and it's always best to have max special level.
