tbf i‘d loved a roof piece spread

but yea i remember being 10 years old and asking myself what‘s the deal with those 5 old guys

To be honest, I don't really care that much about the distinction between how Oda usually handles spreads and full 2 page spreads. It's nice, sure, but I get wanting the chapter to cover as much content as possible, and full 2 page spreads usually make that harder. It's not like the drawing is much bigger than something like the final spread of chapter 1001 during the rooftop.
