This week I tried a recipe I found on TikTok.

Chicken & Zucchini

  • Grilled/baked/pan-seared chicken (whatever your hearts desire is, just go easy on the oil); -- My favorite seasoning is garlic, onion, smoked paprika, salt, Italian, and Tony's Creole
  • Sliced zucchini. Threw it in raw in the pan after the chicken cooked and seasoned with same blend as above.

Pasta Sauce

  • 1% Cottage Cheese blended until smooth
  • 2 to 1 ratio of blended cottage cheese with jarred spaghetti sauce of choice
  • Finely shredded parmesean
  • Mix it all up

Pasta

  • Spaghetti noodles

Note: This is the first time I've tried cooking with cottage cheese. I left it on the heat for approximately ~2 seconds too long and my thick, creamy, spaghetti sauce turned into pure liquid. I had to try again and warmed it up *slightly*. Heat cottage cheese at your own peril.

My meal: 446kcal; 27g Carbs; 19g Fats; 48g of Protein
1/4 cup parm, 2tsp oil, 3.5oz of zucc, 1/3 cup prego three cheese sauce, 1/4 cup cottage cheese, 1/4 cup of noodles (was originally going to have just with zucc but I'm on my period and craving carbs) and 3.9oz of chicken.

(You'll see that my ratio of cottage cheese to prego was off significantly in my serving size. Please see note about cottage cheese turning into water when distracted. I did my best with what I had left lol. Also, use more oil than I ended up using. I didn't use enough and burnt the bottom of my pan.)

My suggestion is to heat up everything BUT the cottage cheese, and then stir it in at the last minute.

(Same idea as for making ganache— you bring the heavy cream to a simmer, remove from heat, let cool slightly, then pour over chopped dark/bittersweet chocolate and stir until smooth. Never, ever heat chocolate directly.)

One of my favorite recipes, air fryer falafel. I like to make a big batch, freeze them on a couple of cookie sheets, and then store them in a freezer bag. It takes maybe an hour of prep beyond the 24 hour soak time. It must be soaked, not from dry. They take about 15 minutes in the air fryer from frozen. Pair with some dips or do a bowl with a whole grain, vegetables, and sauces. Tahini or yogurt sauces are great, hummus can be a bit much on the chickpeas. But really, it's mostly a be creative thing.

I just discovered that the USDA “MyPlate” program has a recipe collection called MyPlate Kitchen with more than 1000 recipes, which you can filter for which course, or other dietary focus you want. It’s so cool!

Mixed leafy greens with sauerkraut and sauerkraut juice.

Sounds pretty terrible, is actually delicious. Plus it makes my tummy feel fantastic because the greens are a prebiotic and the kraut is a probiotic

I love trying new things as salad "dressing", I did this too, but with the Cleveland Kitchen Pickled Red Onions juice. YUMMMM!

* Whole Wheat Sunflower Sourdough, toasted crisp — 60 cal/1 slice (Bavarian Bakery, Longmont CO)

* Crown Prince Brisling Sardines, olive oil — 210 cal/1 can 😋

* Kraft Mayo with Olive Oil, — 45 cal/1T

* Fresh Apricot, 1 — 1.75 oz /25 cal (It’s apricot season, yay! 🍑🎉)

Total: 340 calories

I see you like sardines a lot! I thought I hated sardines, but have recently learned to like them. I saute some leftover quinoa and add the sardines until they are heated through. Very healthy!

Oh, that’s interesting! Would not have thought of that.

I do like them, but my husband *really* likes them! I am working on acquiring more of a taste for them. I like the flavor, but sometimes I find the texture a little off-putting. Toasting the bread to make it crispier or a little crunchy seems to improve the combination.

I don’t have a recipe per se but taco salad is my current obsession. I use lean ground beef, loads of lettuce and other veg, hot sauce, some reduced fat cheese and for my dressing I use Greek yogurt ranch. I crunch up some tortilla chips over the top.

I love it so much! It has protein, crunch, and volume for very reasonable calories. Makes me so happy.
